Poppy Seed Chicken

This is another favorite of ours. It is super easy, which is required for me to make it, ha!

Ingredients:
2 pkg Ritz crackers
1 stick butter
4 Tbsp poppy seed
2 cans Cream of chicken
1 cup sour cream
6-8 boneless chicken breast, boiled and shredded

Crush crackers and mix in 2 Tbsp poppy seed. Pour melted butter over crackers. Put 3/4 of cracker mixture in the bottom of a 9x13 baking dish. Mix together sour cream, cream of chicken, chicken and the remaining poppy seed. Pour into pan over crackers and top with remaining crackers. Bake at 350 for 30-45 minutes.




With this we always have mashed potatoes, rolls and a vegetable, usually green bean bundles (I will post this recipe soon). However, I know that lots of people like to eat it with rice.
