Chicken Pot Pie

This is my mom's recipe and is a family favorite. My mom is a wonderful cook and I am always trying to duplicate her dishes, I can get close but it is never the same. Anyway, this is really easy and it is delicious.



4-6 chicken breast
6-8 potatoes
1 can peas
2 cups chopped carrots
1-2 cans cream of chicken
1-2 prerolled pie crust

Boil chicken (for about an hour), carrots and potatoes (until tender). Shread chicken. Mix chicken, vegetables and cream of chicken. Put into pan and cover with pie crust. You can also put pie crust on the bottom if you choose.

Bake at 400 until crust is golden brown.

The nice thing about this is that it has meat and vegetables in it so I usually just make rolls to go with it and these are our favorite rolls. So easy and good.



I usually use 2 prerolled pie crust on the top of a casserole dish. It doesn't always look pretty but it gives it a thicker crust on top. I have also made this before and put biscuits on top in place of the crust for a change and it was great too.

Soft Chocolate Chip Cookies

This are the absolute best chocolate chip cookies. I got this recipe from a lady who I went to church with when I was growing up.

Ingredients:
2 1/4 cup flour
1 cup oleo
1/4 cup sugar
1 teaspoon vanilla
3/4 cup brown sugar
2 eggs
1 small package vanilla instant pudding
1 teaspoon baking soda
1/2 package chocolate chips

Cream oleo and sugars together. Then add eggs and pudding mix. Add flour, soda, vanilla and chocolate chips. Batter will be stiff. Drop by tablespoon on cookie sheet. Bake at 350. Bake approximately 10 minutes. Do not over bake.
